Vegan keto tortillas (2g net carbs per each!) for your Mexican meal. They’re so soft that you won’t believe they’re gluten-free, eggless and dairy-free, and only need one ingredient – flaxseed meal to make!

These tortillas are not just low-carb, but high in healthy fat and fiber. I’m sure they’ll brighten up your keto/low-carb diet without blowing your carb count (the primary rule right?).

Are Flaxseeds Good for Keto Diet?

Yes, flaxseeds are high in fat content and low in carbs. Almost half of their carbs are non-digestible carbs. They are low in net carbs in other words. Continue reading to see more health benefits of flaxseeds.

Benefits of Including Flaxseeds in Your Meal

I have made flaxseed tortillas for a friend’s gathering. No one there follows any specific diet and they approved the taste and texture of the tortillas! They even told me the following day that their gut felt so good after having that meal (you know, the digestive issue). So let’s talk about what health benefits flaxseeds can bring you.

1. May improve your digestive system

Constipation is a common symptom at the beginning of a keto diet. Though the initial cause may be different among people, it is always good to eat more fiber. Almost all the carbs in flaxseeds are dietary fiber, which can improve digestive function and may help prevent constipation.

2. Provide omega-3 fatty acids

Among plant foods, flaxseeds are rich in alpha-linolenic acid (ALA), which is one of the three main omega-3 fatty acids. Studies show that ALA can keep our heart healthier. Though not all ALA can be converted into the other two main fatty acids, eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), it is still good to include this great source of omega-3 in our daily meals , especially for vegetarian or vegan diets.

3. Act as a good source of healthy fat & protein on plant-based diets

Following a plant-based diet, nuts and seeds are our major sources to obtain healthy fat and protein. According to USDA, 28 grams of flaxseeds (3 tablespoons) offer 11.8 grams total fat and 5.1 grams protein.

How to Make Keto Tortillas with Flaxseeds

1. Prepare 6 parchment paper (7.5” x 7.5”)*See Note.
*Note: You can instead use 2 parchment paper only and reuse them for each tortilla, but you will have to roll and shape one tortilla while cooking the other one.

2. In a mixing bowl whisk together golden flaxseed meal, sea salt and spices (if using). Add boiling water to the bowl. Stir with a spatula until combined and a dough ball formed.

3. Let the dough ball sit for about 15 minutes to allow the fiber to absorb water and it will become easier to handle.

4. Divide the dough ball evenly into 4 to 5 small balls. Place each ball onto a piece of parchment paper and put another piece on top of the dough ball. Flatten the ball gently with your hand first, then roll with a rolling pin until it becomes a 1.5 to 2mm round piece. If you prefer a perfect circle, just use a round plate, cake pan or pot lid to help you cut the edges.

5. Remove the parchment paper on top and reuse it for another dough ball and repeat the shaping step.

6. The tortilla should not be too sticky now. Spray or grease a non-stick pan and heat over medium-high heat*See Note.
*Note: It depends on the stove you used. You may use medium to medium-high heat.

7. Peel off the parchment paper on the bottom carefully and put the tortilla onto the pan to cook for about 2 to 3 minutes until one side becomes golden brown. Flip with a spatula to pan fry another side. Plate up the tortilla when both sides turn golden brown. It should be soft but not crispy.

8. Repeat step 7 until all tortillas are done.

9. Put the filling that you like on the tortillas and make tacos!

Filling for Keto Tortillas Suggestions

These flaxseed tortillas have a pleasant nutty taste and I recommend to fill them with fresh and some sour ingredients to balance the flavor. My favorite vegan and low-carb fillings are listed below:

  • Keto-friendly Mayonnaise
  • Fresh lettuce or spinach
  • Fresh tomatoes
  • Stir-fried mushrooms
  • Stir-fried asparagus
  • Avocado slices
  • Green onions
  • Fresh herbs
  • Black pepper

Storage

You can make the keto tortillas ahead. They can be stored in an airtight container in the refrigerator for up to 2 days. Put them in a ziploc bag in the freezer to keep for up to a month. Just thaw them before cooking.

  • 150 grams organic golden flaxseed meal I used Bob's Red Mill's
  • 1/2 teaspoon fine sea salt
  • 220 milliliter boiling water
  • oil spray
  • 1/2 teaspoon smoked paprika optional
  • 1/2 teaspoon garlic powder optional
