Keto Tortillas with Flaxseed Meal (Vegan)

Vegan keto tortillas (2g net carbs per each!) for your Mexican meal. They’re so soft that you won’t believe they’re gluten-free, eggless and dairy-free, and only need one ingredient - flaxseed meal to make!

Equipment

Ingredients
  

  • 150 grams organic golden flaxseed meal I used Bob's Red Mill's
  • 1/2 teaspoon fine sea salt
  • 220 milliliter boiling water
  • oil spray
  • 1/2 teaspoon smoked paprika optional
  • 1/2 teaspoon garlic powder optional

Instructions
 

  • Prepare 6 parchment paper (7.5” x 7.5”)*see Note 1 below
  • In a mixing bowl whisk together golden flaxseed meal, sea salt and spices (if using). Add boiling water to the bowl. Stir with a spatula until combined and a dough ball formed.
  • Let the dough ball sit for about 15 minutes to allow the fiber to absorb water and it will become easier to handle.
  • Divide the dough ball evenly into 4 to 5 small balls. Place each ball onto a piece of parchment paper and put another piece on top of the dough ball. Flatten the ball gently with your hand first, then roll with a rolling pin until it becomes a 1.5 to 2mm round piece. If you prefer a perfect circle, just use a round plate, cake pan or pot lid to help you cut the edges.
  • Remove the parchment paper on top and reuse it for another dough ball and repeat the shaping step.
  • The tortilla should not be too sticky now. Spray or grease a non-stick pan and heat over medium-high heat*see Note 2 below.
  • Peel off the parchment paper on the bottom carefully and put the tortilla onto the pan to cook for about 2 to 3 minutes until one side becomes golden brown. Flip with a spatula to pan fry another side. Plate up the tortilla when both sides turn golden brown. It should be soft but not crispy.
  • Repeat step 7 until all tortillas are done.
  • Put the filling that you like on the tortillas and make tacos!*see session Storage above

Notes

1. You can instead use 2 parchment paper only and reuse them for each tortilla, but you will have to roll and shape one tortilla while cooking the other one.
2. It depends on the stove you used. You may use medium to medium-high heat.
